Lasagne With Spinach

Spring has finally arrived. Everything around us just started blooming and growing greener and greener each day. We both love to watch all the small green plants come to life around the fields and the forest. This weekend we woke our rooftop garden from its hibernation. We planted the first seeds of the year and hopefully in the next days we will see some cute little plants starting to grow.

After we got our plants ready for spring this lasagne was the perfect meal. With the added lemon, this dish is just perfect for a chilly spring day.

The recipe for this lasagne came to us as a sweet surprise – with Benes new sunglasses. He ordered them from a local FairFashion Shop and the package was send to us with this seasonal lasagne recipe – I was delighted! (Of course also by Bene and his stylish new sunglasses.)

We changed the recipe a little bit because we just cannot leave out our obligatory pinch of nutmeg when it comes to spinach.

Ingredients

Sauce

  • 100 ml cream
  • 100 ml white wine
  • 1 onion

Filling

  • 250 g lasagne sheets
  • 1 Kg fresh spinach
  • 400 g fresh mushrooms
  • 2 cloves of garlic
  • grated cheese
  • pepper
  • salt
  • ground nutmeg
  • grated peel of one lemon

Tips
This lasagne can easily be made into a vegan meal. Just swap the cream, sour cream and grated cheese with a vegan alternative.

Let the dish cool down for 5-10 minutes bevor serving. So the sauce doesn’t run all over the place.

Preparation

  1. Start with the sauce for the lasagne because it needs a moment to simmer.
  2. For the sauce fry the chopped onion until it starts to look glassy.
  3. Then pour the white wine into the pan and let it simmer for a moment.
  4. Add the sour cream to the sauce.
  5. Wash the fresh spinach and heat it in a pan until the leaves are wilted.
  6. Finely chop the garlic and add it with salt, pepper, nutmeg and lemon peel to the spinach.
  7. Turn the heat off and stir in the cream.
  8. Now start to put the lasagne together by adding lasagne plates as the first layer. Then add the mushrooms bevor adding another layer of lasagne plates and adding spinach.
  9. Layer everything in this order until everything is used up.
  10. Top everything off with the rest of the sauce and the grated cheese.
  11. Bake your lasagne for about 35 minutes at 200 °C.
