Iced Coffee: lemon-licorice and gianduja-mint

makes one cup per version

Do you agree that the best moment every summer is to lay under a tree with a cool beverage in your hand? A soft breeze gently rattles the leaves and the sun ist just the perfect amount of warm but not burning hot. Just add a good book to that ans the summer is just perfect. Though this year’s summer is a bit cooler than the last few where we live, we have come up with two different iced coffees to cool you down on a hot summer day.

We love to buy our coffee from a small coffee roastery in Wolfenbüttel. The coffee from small shops is often smoother because the beans are roasted slower and don’t turn as dark. That is why we don’t pour milk or water into our iced coffee. If your coffee is stronger feel free to add milk or a plant based alternative.

So grab your favorite ice cream. And while you wait for your coffee too cool down you can already enjoy the tranquility of laying undernath a tree.

Tips

Prepare your coffee early enough and let it cool down in the fridge. We brewed our coffee one day ahead so it was really chilled.

For the mint-gianduja version it works best if you dissolve the gianduja in the coffee while it is still hot. Otherwise there will be some small pieces of gianduja in your iced coffee.

Of course both version also taste amazing with vegan ice cream.

Ingredients

Lemon-Licorice

  • 120 ml cold coffee
  • 1/2 tsp licorice powder
  • 1/2 tsp organic lemon peel
  • 60 g vanilla ice cream

Mint-Gianduja

  • 120 ml cold coffee
  • 10 g gianduja (or add more to taste) – dissolved in warm coffee
  • 1 stem of mint
  • 60 g vanilla ice cram

Preparation

Lemon-Licorice

  1. Pour the cold coffee into your favorite cup.
  2. Mix the licorice powder and lemon peel with the coffe.
  3. Add the ice cream afterwards to your cup.
  4. You can sprinkle some licorice powder and lemon peel on top of the ice cream.

Mint-Gianduja

  1. Grab another one of your favorite cup.
  2. Pour the cold gianduja unfused coffee into your cup.
  3. Ground the mint in a mortar or pluck it with your fingers. This adds a lot more flavor to the coffee.
  4. Stir in the mint and add your choice of ice cream.
  5. If you want to you can garnish it with a few mint leaves.
